Homemade Plant Milk FAST!

I’ve been wanting an Almond Cow plant milk maker for a while but just thought it was an extra, non-essential luxury desire that I could delay until I forgot about it. Along came COVID19 sequestration and my favorite plant milks became more difficult to purchase through curbside grocery pick up. Almond Cow to the rescue!

Above is my Almond Cow box shortly after arrival. It shipped quickly which was impressive considering the extra strain on delivery as of late. (I think the logo is adorable and I confess that I’m a sucker for branding. Almond Cow grabbed my cow-loving heart quickly and easily.)

Here are the contents of the box: glass milk jug, electric cord, jug scrubber, instructions, sticker, stainless steel appliance, bag of coconut shreds, bag of whole oats (ie: groats…which I also love to eat!), and a bag of almonds.

I knew before my box arrived which milk recipe I was going to make first. The extensive recipe section of the Almond Cow website is so inspiring and surprising! Who knew you could make milk out of peanuts, pistachios, or corn? My heart was set on making coconut cashew aka cococash milk and pulp meal. Stick with me on that last bit. It’s going to blow your mind.

The recipe for cococash milk is 1 cup of cashews (I order organic raw cashews from Nuts.com), 1/2 cup coconut shreds, 3 pitted medjool dates, 2 teaspoons vanilla, and 1/4 teaspoon salt (I use Real Salt brand).

Everything but the salt gets loaded into the filter basket. It’s stainless steel and has very, very fine mesh walls. Some of the vanilla leaked out the bottom so next time I’ll probably add the vanilla in the water with the salt. No soaking or heating required.

The lid of the appliance which also houses the motor for the blender gets connected to the filter basket, twisted, and locked. The appliance pitcher gets filled with 5 cups of water (there’s a measuring line). I prefer and used distilled water. Below is a video of me using the Almond Cow for the very first time. It’s clear I have no idea what I’m doing! But lo and behold that wasn’t necessary! The Almond Cow worked it’s magic without me.

I seriously could not believe how very fast this appliance made a batch of milk. So creamy, delicious, and quick! This recipe is a little sweeter than I’m used to with plant milk (I was buying unsweetened) so I may make it without the dates next time. But that would impact the pulp meal. Oh the pulp meal! Hold on, I’m getting there.

I was so impressed by how much milk one batch made in a matter of minutes. This is a half gallon glass jug same as a standard carton of plant milk. It will keep refrigerated 3-5 days due to lack of added preservatives which I’m thrilled to not be consuming!

Okay so here’s the deal with the pulp meal. After you pour the milk from the Almond Cow pitcher into the glass milk jug, clean up is a snap. Rinse everything with hot water and allow it to dry. But don’t throw away the coconut/cashew/date remnants!! You can save it for baking (hello cookies! bonjour muffins!) or you can….eat it! Straight! Like porridge!

It may not look particularly appetizing but image the flavors of cashews, coconut, and dates mixed into a milky fine oatmeal consistency. I’m not sure if I’ll be making this recipe more for the milk or the pulp meal! It tastes like dessert. I can imagine a pile of fresh or frozen fruit on top for breakfast or some vegan chocolate chips for dessert. It is decadent!

Next I want to make a plant-based creamer. Several store bought vegan creamers are hard for me to digest due to the additives and now I can enjoy thick, rich creamer without concern or digestive upset.

I am very happy – more delighted than I thought I’d be – about this purchase. I think it is an appliance that we will use on a regular basis to enjoy a more wholesome plant milk than we’re able to purchase anywhere already prepared – pandemic or not!
