PREVIEW OPPORTUNITY: Meet Chef Thomas at the free, public Palmetto Plant Eaters Club monthly meeting on Wednesday, March 4th at 6:30pm at UUCL where he will discuss exactly what grains are and why we should be eating them every day. In addition to the three most widely known grains – wheat, rice and corn – he will delve into the lesser known grains and discuss how they can be crafted into delicious and highly nutritious meals.

After nearly 20 years in the world of polymer research and development, Thomas Carrig decided that the American food chain was breaking down and wanted to create change from the inside. He earned degrees in Culinary Arts and Culinary Nutrition from Johnson & Wales University, earned the credential of Nutrition & Dietetic Technician, Registered and is focused on helping people to eat real food from sustainable farms. He currently works part time at Hilton Head Health as a Demonstration Chef and also owns and operates “Chef T,” a personal chef business.

On March 7th, participants in this hands-on class will will prepare some great whole food, plant-based (no added salt, oil, or sugar) recipes that bring grains to the forefront and demonstrate that they are not restricted to being served plain as a little pile on the side. Each recipe will also highlight a different grain, so join us as we whip us such tasty dishes as Moroccan Carrot Sorghum Soup, Quinoa Patties, Farro & Parsley Salad, and Barley Chili. Oh, and we won’t forget dessert, so we’ll make some Amaranth Pudding and Teff Pistachio Biscuits. Come join in the fun and get ready to cook and eat!
